David,

While it is true that entropy can be interpreted as a measure of order, 
entropy invariably increases (or stays the same) only in isolated 
systems. Isolated means "adiabatic" -- it does not exchange heat with 
its surroundings. Neither cells, coal seams, or the planet are isolated 
systems, so one cannot use entropy arguments to draw conclusions about 
our world.
