Confessions of a dedicated tea drinker--
I consider myself to be a teaist, others consider me to be a tea nut. I only
use loose tea and I mail order it. This is my secret splurge area.
I love fine teas, always starting the day with a pot. I usually use a
Chatsford pot because of its ease in steeping. Of late I have been
beginning my day with green tea and I have come to love this tea more and
more. But I love black and oolong teas as well. I, too, have to give up
caffeine by about 2 PM or I am tossing and turning half the night. After 2,
if I want a hot drink, I will spice up some apple cider or drink rooibos tea,
a caffeine free kind of tea grown in South Africa (supposed to have lots of
bioflavinoids).
The tea method of brewing that you described is called Gong Fu and is often
done with special tea pots made from zisha clay found only in China. The
pots are called yixing (pronounced yee'shing) pots. This is a fun way to
brew tea. It makes tea more of an experience than a drink. That's what I
like about brewing tea, it is a ritual that brings you to the present and
quiets the mind. I have a special place where I like to drink and savor my
tea.
